About Elizabeth
I'm Elizabeth, a registered and licensed dietitian in Minnesota, a mom, a gardener, and the keeper of an Irish Wolf Hound. I came to Dietetics as a second career after I discovered first hand how changing what I was eating changed my life. This discovery was so profound for me that I decided I wanted to help others achieve the same changes I saw. I was educated and trained at The University of Minnesota and have worked in a variety of inpatient and outpatient care. I'd like to share my passion for nutrition education and counseling with you.
Approach to care
I want to make eating easier, happier, and healthier for you in a way that fits into your life. I will never ask you to fit into some pre-fabricted plan, instead we'll work together to make a plan based in science that accounts for your beliefs, schedule, habits, and goals. I believe small sustainable goals compound to create great change.
Your first session with Elizabeth
In your first session we'll have a conversation about your path with food and nutrition up to this point, what your current struggles are, and what you hope to achieve through our sessions. Think of it as a coffee yap session with a helpful friend. We'll get to know each other, so I can start planning and guiding you on your nutrition journey.
