About Carol
Hi, I’m Carol, a Registered Dietitian Nutritionist, and I specialize in helping vegan and vegetarian clients improve their health, manage medical conditions, and build balanced eating habits. I frequently work with women navigating weight changes, menopause, PCOS, and metabolic health concerns, as well as clients managing prediabetes, type 2 diabetes, IBS, and heart health. Many of the clients I work with feel like they’re already eating “healthy,” but still struggle with weight loss, cravings, digestive issues, or blood sugar changes. Together, we focus on building balanced meals and sustainable routines that support long-term health without extreme dieting or restriction. My approach focuses on practical, realistic changes that fit into everyday life, helping you feel more confident with food while improving your overall health.
Approach to care
My care philosophy centers around practical, sustainable nutrition rather than restrictive dieting. I believe nutrition should support both physical health and a positive relationship with food. Instead of focusing on rigid rules or perfection, I help clients build structured, balanced meals and realistic habits that can be maintained long term. During our work together, we focus on: • creating balanced meals with adequate protein and fiber • building routines that make healthy eating easier during busy weeks • improving metabolic health markers such as blood sugar, cholesterol, and blood pressure • addressing emotional eating or disordered eating patterns with compassion and practical tools Nutrition is not one-size-fits-all, so my approach is always personalized, supportive, and collaborative. My goal is to help you develop simple habits that support your health in a way that feels realistic and sustainable.
Your first session with Carol
Your first session is a relaxed conversation where we review your current habits and begin identifying a few realistic steps you can start right away. The goal is to get a clear picture of your health history, lifestyle, and goals so we can create a plan that truly works for you. During this visit, we will discuss: • your current eating habits and routines • any medical conditions or symptoms you’re experiencing • your past experiences with nutrition or dieting • your goals for health, energy, weight, or digestion From there, we will begin identifying small, practical changes you can start implementing, such as meal structure, food choices, or daily habits that support your goals. My goal for the first session is for you to leave feeling supported, clear on your next steps, and confident moving forward.
